Where do you make your chocolate?
We operated under the residential kitchen law, which regulates any non-perishable food operation located inside a private residence. In a few words, we make our chocolate at home.
Is your chocolate organic?
Our products have not been officially certified "Organic" by the USDA, although they are 100% organic. We plan to file for certification once we are more established.
What is fine chocolate?
Fine chocolate is a small but growing segment of the chocolate industry representing 5% or less of chocolate market sales. It is defined in terms of its flavor, texture and appearance, as well as how its limited ingredients, high cocoa and low sugar content, are sourced and processed. Only pure flavoring ingredients such as sugar, vanilla, and soy lecithin (a stabilizer) are acceptable in dark chocolate bars. We don't use soy lecithin. In milk chocolate, milk solids will be added to the mix. Cocoa butter is the only acceptable fat ingredient - fine chocolates contain no vegetable or animal fats, and no artificial flavoring ingredients.
